Ingredients
- 1 package of Lotta Products Yellow Cake Mix
- 3 large eggs
- 1/3 cup vegetable oil
- 1 cup water
- Zest of 1 orange
- Zest of 1 lemon
- 2 tablespoons fresh orange juice
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
Citrus Glaze:
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- 1 tablespoon orange juice
- Additional zest for garnish (optional)
Instructions
- Preheat the Oven and Prepare the Pan:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13 inch baking pan, or line it with parchment paper for easy removal.
- Mix the Cake:
- In a large bowl, combine the Lotta Products Yellow Cake Mix with the eggs, vegetable oil, and water. Beat with an electric mixer on medium speed until well blended.
- Add the orange zest, lemon zest, orange juice, lemon juice, and vanilla extract to the batter. Mix until these ingredients are evenly distributed throughout the batter.
- Bake:
- Pour the batter into the prepared baking pan.
- Bake in the preheated oven for 28-33 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Prepare the Citrus Glaze:
- While the cake is baking, prepare the glaze. In a small bowl, whisk together powdered sugar, lemon juice, and orange juice until smooth. If the glaze is too thick, add a little more juice; if too thin, add more powdered sugar.
- Cool and Glaze the Cake:
- Remove the cake from the oven and let it cool in the pan for about 10 minutes, then transfer it onto a wire rack to cool completely.
- Once cooled, drizzle the citrus glaze over the cake. Sprinkle additional zest over the glaze for a burst of color and flavor if desired.
- Serve:
