Low-Sugar Sunshine Citrus Cake

  • 1 package of Lotta Products Yellow Cake Mix
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1 cup water
  • Zest of 1 orange
  • Zest of 1 lemon
  • 2 tablespoons fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

Citrus Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon orange juice
  • Additional zest for garnish (optional)


  1. Preheat the Oven and Prepare the Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×13 inch baking pan, or line it with parchment paper for easy removal.
  2. Mix the Cake:
    • In a large bowl, combine the Lotta Products Yellow Cake Mix with the eggs, vegetable oil, and water. Beat with an electric mixer on medium speed until well blended.
    • Add the orange zest, lemon zest, orange juice, lemon juice, and vanilla extract to the batter. Mix until these ingredients are evenly distributed throughout the batter.
  3. Bake:
    • Pour the batter into the prepared baking pan.
    • Bake in the preheated oven for 28-33 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  4. Prepare the Citrus Glaze:
    • While the cake is baking, prepare the glaze. In a small bowl, whisk together powdered sugar, lemon juice, and orange juice until smooth. If the glaze is too thick, add a little more juice; if too thin, add more powdered sugar.
  5. Cool and Glaze the Cake:
    • Remove the cake from the oven and let it cool in the pan for about 10 minutes, then transfer it onto a wire rack to cool completely.
    • Once cooled, drizzle the citrus glaze over the cake. Sprinkle additional zest over the glaze for a burst of color and flavor if desired.
  6. Serve:
    • Slice and serve the cake once the glaze has set. Enjoy the moist, citrusy flavor that makes a perfect treat for any gathering or a simple family dessert.
