Ingredients:
- 1 box Notta Lotta Sugar Chocolate Cake
- 1 can of Diet Dr. Pepper, Diet Cherry Coke, or Cherry Coke Zero
- 3 large eggs
- 8 oz sugar-free cool whip
- 2 tsp sugar-free cherry Jell-O
- 1 cup milk
- 1 box sugar-free Jell-O vanilla instant pudding
- 25 de-stemmed maraschino cherries
Directions:
- Preheat the oven to 350 degrees.
- Spray a 9×13 pan with non-stick cooking spray
- In a bowl, combine and mix the Notta Lotta Sugar Chocolate Cake mix, eggs, and soda.
- Add 15 maraschino cherries, halved.
- Pour the batter into the greased pan.
- Bake for 22-24 minutes or until a toothpick comes out clean.
- Remove cake from oven and allow to cool for 20-30 minutes.
- In another bowl, combine the cool whip and cherry Jell-O until mixed.
- In a separate bowl, combine the milk and pudding mix. Whisk until thickened. Mix the cool whip mixture with the pudding mixture.
- Spread the frosting evenly over the cooled cake.
- Cut the remaining cherries in half and sprinkle evenly on top of the frosting.
- Refrigerate until you’re ready to serve. Enjoy!
