Low-Sugar Chocolate Cherry Cake

Ingredients:

  • 1 box Notta Lotta Sugar Chocolate Cake
  • 1 can of Diet Dr. Pepper, Diet Cherry Coke, or Cherry Coke Zero
  • 3 large eggs
  • 8 oz sugar-free cool whip
  • 2 tsp sugar-free cherry Jell-O
  • 1 cup milk
  • 1 box sugar-free Jell-O vanilla instant pudding
  • 25 de-stemmed maraschino cherries

Directions:

  1. Preheat the oven to 350 degrees.
  2. Spray a 9×13 pan with non-stick cooking spray
  3. In a bowl, combine and mix the Notta Lotta Sugar Chocolate Cake mix, eggs, and soda.
  4. Add 15 maraschino cherries, halved.
  5. Pour the batter into the greased pan.
  6. Bake for 22-24 minutes or until a toothpick comes out clean.
  7. Remove cake from oven and allow to cool for 20-30 minutes.
  8. In another bowl, combine the cool whip and cherry Jell-O until mixed.
  9. In a separate bowl, combine the milk and pudding mix. Whisk until thickened. Mix the cool whip mixture with the pudding mixture.
  10. Spread the frosting evenly over the cooled cake.
  11. Cut the remaining cherries in half and sprinkle evenly on top of the frosting.  
  12. Refrigerate until you’re ready to serve. Enjoy!
